Fall Harvest Salad


Fall is a beautiful season, full of warm colors and cozy aromas. It’s also a season that brings an abundance of delicious and nutritious produce, which makes it the perfect time to create healthy and hearty salads. One of my favorite fall salads is the Fall Harvest Salad, which is a combination of mixed greens, fruits, spiced pecans, and goat cheese, all drizzled with a simple and flavorful vinaigrette. In this blog post, I will share with you my recipe for this delicious and easy-to-make salad.


The salad itself is easy to put together – simply arrange the mixed greens, sliced pears and apples, thinly sliced radishes, spiced pecans, crumbled goat cheese, and dried cranberries on a large platter. But what really takes this dish to the next level is the simple vinaigrette that ties everything together.


To make the vinaigrette, simply combine champagne vinaigrette, minced shallot, minced fresh garlic, dijon mustard, kosher salt, black pepper, and extra virgin olive oil in a mason jar. Give it a good shake to blend everything together, then adjust the seasoning to your liking. Ladle the vinaigrette over the salad, toss gently, and serve.

Ingredients:


Salad

8 cups spring mixed greens

2 pears sliced

2 apples sliced

2 radishes thinly sliced

3/4 cup spiced pecans

3/4 cup crumbled goat cheese

1/2 cup dried cranberries


Simple Vinaigrette

3 tablespoons champagne vinaigrette

1 teaspoon finely minced shallot optional

1 teaspoon minced fresh garlic

1 teaspoon dijon mustard

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 cup extra virgin olive oil

INSTRUCTIONS:


  • Assemble greens and the following six ingredients on a large platter. To a small size mason jar add ingredients for the vinaigrette. Secure lid and shake well until blended together. Adjust seasonings to taste. Ladle desired amount of vinaigrette over salad, toss gently, and serve.

One of the best things about this Fall Harvest Salad is its versatility. It works equally well as a side dish or a main course, depending on your appetite. And it’s easily customizable – you could swap out the pears and apples for roasted butternut squash or sweet potato, for example, or use feta cheese instead of goat cheese.


But perhaps the best thing about this salad is that it’s healthy and packed with nutrients. The mixed greens provide a variety of vitamins and minerals, while the nuts and cheese add protein and healthy fats. And because the vinaigrette is homemade, you can be sure that it’s free of any unnecessary additives or preservatives.
