Ingredients:


Filling

2 cups cooked chicken, shredded (rotisserie chicken works well)

1 cup diced onion

1 cup diced bell pepper, red, orange, or green

1 cup corn kernels, fresh, frozen, or canned (optional)

1 (10 oz) can Diced Tomatoes with Green Chilies, (with liquid)

1 teaspoon chili powder

1/2 teaspoon ground cumin

1/2 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon vegetable oil

2 cups shredded cheddar cheese


Enchilada sauce

2 cups green or red enchilada sauce, or your favorite salsa, (store-bought saves on time)


Assembly

8-10 small flour tortillas

1 cup shredded cheddar cheese, for topping (use more if you'd like)

Chopped fresh cilantro, sliced green onions, and sour cream, for garnish (optional)

Instructions:


Prepare the filling
  • In a large skillet, heat the vegetable oil over medium heat.
  • Add the diced onions and bell peppers. Sauté until they become tender, about 3-5 minutes.
  • Stir in the shredded chicken, corn (if using), diced tomatoes with green chilies (with their liquid), chili powder, ground cumin, garlic powder, and salt and pepper to taste.
  • Cook the mixture for another 2-3 minutes until everything is heated through and well combined. Remove from heat.


Preheat the oven
  • Preheat your oven to 375°F (190°C).


Assemble the enchiladas
