Spicy Hungarian Sausage Goulash (Lecso)

Spicy Hungarian Sausage Goulash (Lecso)

COOK TIME: 45 MINUTES
SERVINGS: 6 SERVINGS
Ingredients:
2 (28 oz cans) whole peeled tomatoes, drained and sliced, (or fresh tomatoes)
2 lbs Anaheim or yellow chilies, cored and sliced
1 large onion, diced
3/4 slab bacon, diced
1 1/2 tsp bacon fat
1 1/2 tsp Hungarian Sweet Paprika
4 Hungarian smoked sausages, sliced 1/4 inch thick
1 tsp olive oil, for cooking
1 tsp unsalted butter, for cooking
Salt and pepper, to taste
6 cups cooked white rice, for serving
Instructions:
- In a large skillet heat olive oil and butter over medium heat; add onions and sauté until soft. Add bacon and sauté until slightly cooked; making sure not to crisp or overly brown the bacon.
- Add tomatoes; sauté until warmed throughout. Add yellow chilies, Hungarian sweet paprika, and additional bacon fat; mixing well. Add smoked sausage; mix well and increase heat to medium high. Bring to a boil, then reduce heat to low; simmer for 30 minutes.
- Serve Spicy Hungarian Sausage Goulash (Lecso) over white rice.
