Old Fashioned Oatmeal Cookies With Vanilla & Cinnamon

Ingredients:


1 cup unsalted butter, (2 sticks) softened

1 cup light brown sugar, firmly packed

1 cup granulated sugar

2 large eggs

1 tbsp vanilla extract

2 cups all-purpose flour

1 tsp cinnamon

1 tsp baking powder

1 tsp baking soda

1/2 tsp table salt

2 cups old-fashioned rolled oats

Instructions:


  • Cream butter and sugars until smooth, beat in eggs and vanilla.
  • In a separate bowl add flour, cinnamon, baking powder, baking soda, and salt. Mix ingredients together until well combined.
  • Add flour mixture into creamed mixture and blend together thoroughly. Stir in oats.
  • Chill batter for 30 minutes (optional). Preheat oven to 375°F and prepare your baking sheet. Grease baking sheet, or use non-stick foil, parchment paper, or a Silpat liner.
  • With a teaspoon or a small ice cream scooper, place a rounded teaspoon full of cookie dough on prepared baking sheet, allowing room to spread.
  • Bake for approximately 10 minutes, pulling cookies out when they are still slightly wet in the center. They will look fluffy while baking and flatten once cooled, creating a crispy outside and chewy inside.
