Ingredients:


2 cups mashed bananas, (5 overripe bananas)

1/2 cup unsalted butter, melted (1 stick)

1 1/4 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 cup of milk

2 cups flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon +/- coarse sugar, (to top)

Instructions:


  • Preheat the oven to 350°F. Spray a 9x5 inch-loaf pan with non-stick cooking spray, or grease with butter and set aside.

  • In a medium size mixing bowl cream together the butter and sugar. Add the mashed bananas, egg, vanilla, cinnamon and milk, mix well.
  • To the wet mixture, add the flour, baking powder, baking soda, and salt. Mix until smooth.
  • Pour into the prepared loaf pan. Sprinkle the top with coarse sugar. Bake at 350°F for 50 minutes or until a toothpick inserted into the middle comes out fairly clean.
