Slow Cooker Italian Beef Dip Sandwiches

COOK TIME: 6-8 HOURs, SLOW COOKER  on low 
servings: 8 servings


Ingredients


  • 3 to 5 lbs. top round roast, chuck roast, or rump roast
  • 1 packet dry Italian salad dressing mix
  • 1 tablespoon garlic powder
  • 1/2 teaspoon kosher salt (optional; the dressing mix and giardiniera brine already contain salt)
  • 1 teaspoon freshly ground black pepper
  • 1/2 jar Chicago-style mild giardiniera with brine (reserve the other half for serving)  (I prefer the Marconi brand for its authentic flavor)
  • 1 1/2 cups beef broth
  • Fresh Italian sandwich rolls, toasted for serving
  • Mozzarella cheese (optional, for topping)
Instructions


Prep the Beef - Place the roast in the bottom of a slow cooker.

  1. Season - Sprinkle the packet of dry Italian dressing mix, garlic powder, salt if using (I recommend holding off), and pepper evenly over the meat.
  2. Add Giardiniera and Broth - Pour in 1/2 jar of giardiniera with the brine, followed by the beef broth.
  3. Slow Cook - Cover and cook on low for 6 to 8 hours, or until the meat is fork-tender and easily shreds.
  4. Shred and Return - Remove the beef, shred it with two forks, and return it to the juices in the slow cooker. Let it soak for another 15 to 30 minutes to absorb more flavor.
  5. Reserve the Juices - Before assembling, ladle some of the flavorful broth into a small bowl for dipping. This turns your sandwich into a savory beef dip that is incredibly satisfying.
