Slow-Cooker Italian Beef Dip Sandwiches
There’s something deeply satisfying about the kind of sandwich that requires two hands, a sturdy roll, and plenty of napkins. This Italian Beef Dip Sandwich, inspired by the Chicago classic, brings that kind of comfort straight to your kitchen. Slow-cooked until fork-tender and soaked in a savory, peppery broth, the meat becomes rich and irresistible. Piled high onto warm, crusty rolls and finished with a spoonful of giardiniera, this sandwich is bold, hearty, and unforgettable.
Though often mistaken as a traditional Italian dish, the Italian Beef Sandwich is truly an American creation. It first appeared in Chicago’s Italian immigrant community during the early 1900s, when resourceful home cooks stretched tough cuts of beef into meals that could feed large families and church gatherings. By slicing the meat thin, soaking it in seasoned broth, and serving it on hearty bread, they transformed a humble roast into something special. Over time, the sandwich gained popularity at weddings and street stands, eventually becoming a staple of Chicago’s culinary identity.

Authentic Italian Beef Sandwiches are typically served with nothing more than the beef, its juices, and a topping of giardiniera or sautéed sweet peppers. No cheese, no frills. However, in the spirit of everyday cooking and personal taste, this home-style version includes an optional mozzarella topping for those who like a bit of creamy melt with their meat. Think of it as Italian-inspired with a little extra Americana flair.
For busy weeknights, school nights, or game day spreads, this recipe couldn’t be easier. Everything goes into the slow cooker, and a few hours later, dinner is ready. The best part? You can reserve some of the flavorful cooking liquid for dipping, turning this sandwich into a Midwestern take on the beloved French dip.

Whether you stick to tradition or add your own family-friendly twists, this Italian Beef Dip Sandwich carries a bit of culinary history in every bite. It’s a recipe born from thrift and tradition, and one that continues to bring people together around the table, just as it did over a century ago in the heart of Chicago.

Slow Cooker Italian Beef Dip Sandwiches
prep time: 15 minutes
COOK TIME: 6-8 HOURs, SLOW COOKER on low
servings: 8 servings
Ingredients
- 3 to 5 lbs. top round roast, chuck roast, or rump roast
- 1 packet dry Italian salad dressing mix
- 1 tablespoon garlic powder
- 1/2 teaspoon kosher salt (optional; the dressing mix and giardiniera brine already contain salt)
- 1 teaspoon freshly ground black pepper
- 1/2 jar Chicago-style mild giardiniera with brine (reserve the other half for serving) (I prefer the Marconi brand for its authentic flavor)
- 1 1/2 cups beef broth
- Fresh Italian sandwich rolls, toasted for serving
- Mozzarella cheese (optional, for topping)
Instructions
Prep the Beef - Place the roast in the bottom of a slow cooker.
- Season - Sprinkle the packet of dry Italian dressing mix, garlic powder, salt if using (I recommend holding off), and pepper evenly over the meat.
- Add Giardiniera and Broth - Pour in 1/2 jar of giardiniera with the brine, followed by the beef broth.
- Slow Cook - Cover and cook on low for 6 to 8 hours, or until the meat is fork-tender and easily shreds.
- Shred and Return - Remove the beef, shred it with two forks, and return it to the juices in the slow cooker. Let it soak for another 15 to 30 minutes to absorb more flavor.
- Reserve the Juices - Before assembling, ladle some of the flavorful broth into a small bowl for dipping. This turns your sandwich into a savory beef dip that is incredibly satisfying.
- Assemble Sandwiches - Spoon the shredded beef onto warm, toasted Italian rolls. Top with more giardiniera for crunch and brightness. Add mozzarella cheese if desired.
- Serve Hot - Serve with a side of the reserved juices for dipping. These sandwiches are juicy, tender, and full of bold flavor.
Tips and Variations
- For extra-melty sandwiches, place them under the broiler for 1 to 2 minutes after adding mozzarella, then top with giardiniera for crunch and brightness.
- This recipe doubles easily and is great for meal prep or parties.
- If you like it spicy, use hot giardiniera or add crushed red pepper flakes during cooking.
